Philippine Mango Tomato Salad is a light and refreshing side dish that pairs well with grilled meats or seafood. A delicious combination of juicy mangoes, juicy tomatoes, onions and cilantro in an Asian style vinaigrette; it’s like a party in your mouth!

These are my go-to side dishes for BBQs, dinners, and pretty much any food I want to freshen up, and they always hit the spot! However, the Filipino mango and tomato salad is my favorite of all.

Crispy mangoes, plump tomatoes, spicy onions, fresh cilantro flavor, sweet and savory dressing all come together in one big bowl of amazing flavors and textures.

It’s refreshing and delicious, but also easy to make, inexpensive, and nutritious to boot!

Helpful Hints

For the best texture, use ripe but firm mangoes.
Don’t like cilantro? Replace with green onions.
I like to de-seed my tomatoes so they don’t dilute the salad. I usually serve this mango salsa as a side dish with grilled/grilled meats and seafood, but it’s so good that I can eat it straight with a spoon. Or a shovel, judging by how much I take.

1 large ripe but firm mango, peeled and diced
1 large Roma tomato, de-seeded and diced
1/2 small red onion, peeled and diced
1/4 bunch cilantro, stemmed and coarsely chopped
1/4 cup vinegar
3 tablespoons fish sauce
1 teaspoon canola oil
1 tablespoon sugar
1/4 teaspoon freshly ground pepper
