Start by preparing the filling for the sardines. Make it by sautéing canned sardines in tamato sauce with garlic, onion and tamato. Season with salt and pepper and squeeze in a piece of squid to reduce the fishy taste. I also like to add some chopped green onions to the mixture.

Then make an eggplant omelet. To do this, first prepare the eggplant. For this recipe, I fried the eggplant until the insides are soft. Please note that the eggplant skin may burn during the process. You’ll know you’re almost done once you see the steam coming out of the cracks in the skin.

Time to cook the ingredients together. Start by whisking or whisking the eggs in a large bowl. Heat oil in a clean skillet. Dip the eggplant slice into the beaten egg. Put it on the pan.
